A chicken salad that bursts with flavor in your mouth. Easy to toss together and a great way to use up extra cooked chicken (or turkey!).
Ingredients
4cupscooked chicken diced
⅔cupapple, diced into small pieced
⅔cupred seedless grapes, quarteredor cut into ⅛th if the grapes are large
½cupcelery, diced into small pieces
½cupyellow or sweet onion, minced
3green onions, sliced thinly
¼cupdill relish ok to sub for minced dill pickle
2teaspoonsdried dillor sub 1 tablespoon fresh
½ - ⅔cupmayoI use light mayo
salt and pepper to taste
Instructions
Mix everything except the mayo into a large bowl.
Start with the lesser amount of mayo and add more as needed. Add any salt and pepper to taste.
Enjoy right away, or store in an airtight container until ready to use. Can make it a day ahead.
Notes
This recipe is very versatile and forgiving if you don't have or don't like one of the ingredients. The combination of the sweet-tart fruit and the texture of the apples and celery really make it a party for your tastebuds.
